A new adventure, a new recipe!

This is my 1st ever post, in my 1st EVER blog!!!!  Hope you all enjoy this as much as we do! XoXo

Ok so I love chicken, and my family and I have it a few times a week… but man can chicken get boring!!!  So, Steven and I started concocting new recipes… who doesn’t love to find a new recipe, especially for chicken! Well, I have found the one that is just simply OMG DELICIOUS!!!  Please try it out, add whatever ingredients you think will make it better and let me know!!!

Crispy Ritz Chicken

  • 1 Sleeve Ritz crackers, crushed
  • 7 Small chicken breasts
  • 1 Bag of shredded 3 Cheese mexican blend
  • Milk
  • Salt & pepper
  • Oregano

Preheat oven to 400°F and coat a baking dish with cooking spray, set to the side.

Take Ritz crackers out of the sleeve and place in a food processor.  Pulse until there are no chunks of cracker left and place crumbs in a bowl.  Get 2 more bowls out. In one place milk, then next place some of the cheese.  Next take each chicken breast dunk it in the milk, then put in the cheese bowl. Cover with cheese and press into the chicken.  Then place chicken on the ritz crumbs, coat and press into chicken.  Last place breast in baking dish.

Sprinkle with salt, pepper and oregano.  Now top with as much of the remaining cheese as you wish!

Cover with tin foil and bake for 30 minutes.  Take out and remove foil, bake for an additional 10 minutes, or until top begins to brown and crisp up.

*FYI ~ I have discovered this tastes amazing served over long grain rice with peas and carrots!!!*

**Hint – I have found that if you use a baking dish that fits all your chicken breasts SNUGLY then the chicken will come out juiciest!!!**
